More About Apples

Unlike most other fruits and vegetables, you buy apples at the market by the variety name. There are several hundreds of varieties, varying in taste, colour and texture—and only a few of these are carried by modern supermarkets. Though available year-round, each variety has its own growing season, so various apples will naturally lend themselves better to different seasons of cooking and eating. Early summer varieties tend to be light in color and tart in flavor, while late fall apples may be a darker red with a sweeter flavors.
